Turmeric Muffin Top Cookies

Ingredients:

  • 1 1/2 cup GF all purpose flour
  • 1 tbsp turmeric extract (sold on our site) 
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1 pinch of sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup coconut sugar
  • 1/4 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1/2 cup melted vegan butter

For coating:

  • 1/4 cup coconut sugar
  • 1 tbsp cinnamon

Directions:

  1. Mix wet ingredients
  2. Mix dry ingredients
  3. Combine ingredients
  4. Refrigerate batter for 20 minutes
  5. Preheat oven to 350 degrees
  6. Roll dough into golf ball sizes
  7. Roll them in the coating mixture until all surface is covered
  8. Drop them on a baking sheet about 1 1/2 inches apart
  9. Bake for 13 minutes
